BACON-AVOCADO-CARBQUIK SCONE/BISCUIT


[UPDATE: TASTE & TEXTURE REALLY GOOD. CAUTION!]

[FURTHER UPDATE: I guess they must have been OK, because someone stole the remaining biscuits out of the resident fridge.] (crying emoji)

1 1/2 cups Carbquik
1 cup Avocado
1 Egg White
1 tbsp Bacon Fat AKA "Animal Fat or Drippings"

Mix Ingredients. Divide into 8 globs. Cook globs in Microwave for 1 minute each, one at a time. Or, don't be in a Physical Rehab place & use an Oven. :)

All the above ingredients came out to:
Chol Fat Carbs Net C Prot Cals
32 72.85 85.04 12.04 41.89 910

If divided into 8 scone/biscuits, each would have:
Chol Fat Carbs Net C Prot Cals
4 9.11 10.63 1.50 5.25 114

If one of the Biscuits was traveling @7mph on an pony named "Star", another Biscuit was on a train @20mph to Philadelphia, and I added 2 apples to the other biscuits--which biscuit would be the first in my mouth? :)

What about oven?

Unfortunately, I don't have access to an oven in this Nursing Home/Physical Rehabilitation Facility so ??? The manufacturer suggests 10-12 min on a greased cookie sheet @350 for biscuits made of only Carbquik & water, not sure how various other ingredients would affect this. The one time the kitchen staff baked some Carbquik biscuits for me they turned out much drier than microwave & slightly burnt. This would probably be less of a problem with these, as the dough here is a lot more moist than the biscuits I've made before. They also weren't able to keep track of the time, as they were preparing meals, and had to judge by sight. I'll have them try again when I can. One upside to the microwave might be that the mono-/polyunsaturated fats from the Avocado may be less denatured by the shorter exposure to heat. This often comes up when unripe Avocados are sometimes microwaved for less than a minute to cause the chemical reaction that "ripens" them, rather than cooking them, in the hope that the healthy fats are damaged as little as possible.

I don't think the exact amounts are so important with Carbquick vs flour, because one can make Biscuits from Carbquik + water only. This time I tried to stuff as much avocado in as I could while not too runny. I use 1 1/2 cups this time because that was all that was left in the box, and just estimated the other ingredients. I'm not sure when I'll make some again because A.) I'm out of the mix and B.) somebody stole the rest of the biscuits out of the fridge. At least I overdid it and ate several before putting rest in fridge.

I liked the one with the bacon and bit of bacon fat better, but they were maybe TOO good for me to handle sensibly. :) The extra avocado was good in this batch.

I ate too many of the biscuits in one sitting before they rest were stolen. There was not too much avocado in these, for me at least. I found the recipe for "Avocado-Bacon Scones", though with regular flour, in a Google search. I just guestimated amounts of the ingredients that worked, but Carbquik seems to be very forgiving. I've various batches of dough, ranging from very firm to very moist and all worked pretty well. One the other had, I was just happy to have a biscuit after not having any for 5-6 months. I imagine one could add just about any mashed fruit or vegetable to add moistness. I used Avocado because they contain very few carbs, have lots of fiber, and they have a lot of good monounsaturated fats.
