Looks really good! Did you hand slice the "noodles" or use a cutter? I've been pondering the purchase of one of the fancy slicer things.

I've haven't that that far yet I got zucchini but I was going to make bread out of it .so maybe I need to pick up another one .

I used a vegetable peeler to make ribbons and then carved the ribbons into noodle shapes with a paring knife.

We found that the Veggitti ($10 @ Walmart & Target) works rather well for making veggie noodles. You do need to have some hand/wrist strength to use the contraption (They sell an organ grinder version for $20) and the end piece is worthless for holding the veggie in place. Nevertheless, it gets the job done with minimal prep.

The prep was easy on my hands and wrist and kind of meditative, but if I had to make a bunch of noodles a gadget would definitely be a good investment! It's time consuming.

I w-a-a-nt one! Of the organ-grinder ilk due to three types of arthritis. Okay, folks, I need a totally candid reply to this question: Do the vege noodles actually resemble pasta enough to make them worth trying? I pretty much can't tolerate tomato-baed sauce but would like to try something with the noodles.
