ALMOND FLOUR CHEESE BITES...goood thursday morning..just came back from a morning ride..weather man was right..it did rain right before i was ready to quit for my ride..i woke up at 3am..kept watching weather on phone..tryin to decide if i could get a ride in or not..finally decided to put rain gear on under yellow shirt i wear..was out the back door an on ride at 430am...glad i wore jacket..did hit rain off an on most of ride..but right at end you could see the rain getting closer..so called it a ride..wanted more miles..but guess thats a ride for tomow..

made what i call cheese bites yesterdaay..

recipe i used

For the dough:

1 ½ cups superfine almond flour ...gonna try just one cup of flour
½ teaspoons xanthan gum .... I used psyllium husk
1 ½ teaspoons baking powder ....gonna try one teaspoon of powder
1 large egg
1 ½ cups part-skim finely grated mozzarella cheese

now word of warning...dough comes out wet..not sure what i need to cut down on...but leave it out on parchment paper for a few an it works fine..i cut the dough into 2 portions...then use parchment paper on top an rolling pin on top of paper..keeps pin nice an clean..added cheese, chicken, an peppers to both portions..rolled them into a roll an pinched off ends..when they come out of oven i used a pizza cutter..rolled it down the middle...and acrost it several times..i ended up with like 16 pieces..gave one whole portion to my neighbor next door...

LOOKIN like its gonna rain till noon or so..grass an farmers fields need it..just gonna sit an rest for a few..as i listen to it rain..was a cool ride when it started raining..glad i took a rain jacket for a change..or id a been soaked worse then i was..

WELL HAVE A GREAT THURSDAY...I just got that rain jacket 2 weeks ago..an it wasnt snug when i got it..but its even more room acrost tummy when i put it on today...inches is where its coming off at...an il take it...

forgot to add that...340 for 30 min or until they turn brown...sorry

The psyllium husks will need time just to sit to develop the stickiness that takes the place of the gluten in wheat breads. If you watch the keto king baker on YouTube he gives an explanation and example in one of his videos.
