Yummy stuffed green pepper for dinner! I made enough for five other meals this week and bought everything from Aldi's for less then 15 bucks! Who's a smart shopper? I am oh yes I am lol!

Great idea, I just started a low carb diet

I just kind of made the recipe up. I used six green peppers, cut the tops off and take out the flesh inside. Then I cooked up ground beef( made it with ground chicken before to cut calories) and then drained the grease while I was cooking up a box of beef rice I used olive oil instead of butter. Chopped up about a 1/2 of onion and once the rice was cooked I mixed the onion meat and rice together and stuffed it inside the green pepper and put a little shredded cheddar cheese on top and baked at 400 for about 15 minutes or until the pepper is soft when poked with a fork and the cheese starts to get brown. Calories for one is about 450 but if you take off the cheese and so wild rice and ground chicken you can save like a 100 calories. I didn't this time cause it wasn't on sale. But both ways are super super yummy! Oh and that includes the sour cream on top! So yummy!!!!

Looks pretty good. I will have to try one with chicken. I have made one with turkey. Not too bad as long as you put some season to the turkey.
