So I have been quite intrigued by the cauliflower mash recipe in place of mashed potato. Tonight I made it and OMG!!!!!! It is really really good! And low cal! Thank god for cauliflower!!

I got the recipe from fatsecret. Take a full head of cauliflower, boil it until its tender, strain, cut it in pieces, I added two table spoons of olive oil, garlic and some salt. You can add whatever you may want to your taste. Take a blender or hand mixer and mix it all up. That's it! Sooooo simple and it actually does have a creamy taste and extremely similar to mashed potato. not as thick but you know what, my brain could not tell the difference!!! And it's low calorie (big time) as long as you don't add to much stuff to it (ex. butter, cream). Yum!!
