Chocolate Protein Powder Pancakes
Another variation on low carb pancakes
Ingredients

1/2 serving french vanilla protein powder
2 tbsp hazelnut meal / flour
1/2 tsp baking powder
1 tbsp heavy whipping cream
1 tsp cocoa powder
1 large egg
1 tbsp olive oil

Directions

Add all the dry ingredients - protein powder, hazelnut flour, baking powder & cocoa powder and mix.
Add the wet ingredients to the dry ingredients and mix thoroughly. You probably want to add a Tbsp of water to thin the mixture.
Pour pancake on a hot pan/griddle and flip when bubbles have formed. Enjoy.

My original whey protein powder came with a smaller scoop and I used a whole scoop. This current stuff I use the scoop that came with the first powder. I think it is like 46cc vs 98cc but I'm too lazy to go find the two scoops (if I could).

Thanks for posting it as a journal entry. I didn't know you could cook with protein powder. I tried to make a hot drink with it once and that was a disaster.

I had never used protein powder for anything until I started reading low carb pancake recipes which are pretty much all based on a combo of nut flour and protein powder. I don't do soy or rice so whey seemed like the way to go. Different brands have really different flavours. Some of my early pancake recipes had splenda in them but my current protein powder has stevia in it and is quite sweet. I think this is the 4th iteration I've done on this kind of recipe swapping different nut flours (mostly almond & hazelnut), adding cinnamon or chocolate or other spices. I even did one that had a TBSP or two of pumpkin pulp to try and make it moister. (That actually worked pretty well but I don't make them often enough to use up a whole can.) It is fun to experiment. :)

Thanks, Rowan...I may have to try this soon! I don't buy the protein powder as I have never liked it in drinks, but perhaps it will be better in the pancakes!
