I saw recipe for "oopsie rolls". they are suppose to be a carb free bread substitute. they are made with eggs and cream cheese.
I made them and they are a poor bread substitute. they taste like a really light airy egg. I added chives and garlic to mine. they are good as a change but no way do they make for a second think of making a sandwich with them.
has anyone else tried these? what are your thoughts?

I've made them, and I agree with you... Definitely not a bread substitute. I added sweetener to mine and had them with coffee. I prefer the flax seed "muffin in a minute" (Atkins recipe) personally. Have you tried those?

Yeah, the oopsie rolls are more of a souffle than a bread. They're not bad toasted, but if your mouth is expecting bread, it will be sorely disappointed. I have yet to find any acceptable low-carb bread substitute.

I have done the atkins muffin in a minute- really liked them. thanks for the reminder I forgot about them. at least feel like I am eating a muffin when I have them. certainly not the usual muffin but it will do as a substitute
