My first effort to make home made kimchi appears to be successful. The kimchi has a slight pleasant fizz on the tongue from the fermentation. It was easy! I followed “How to Make Easy Cabbage Kimchi” recipe from kitchn.com

Thanks, guys! John, it took about six days to ferment noticeably: two days on the counter and four days in the fridge. I think it would probably be best if I give it another week in the fridge but I started eating it, won’t last long.

Wow, you made your own? It looks perfect! My best friend’s mom is Korean and she makes me kimchi every year for my bday. This year, it was chonggak kimchi, which is my favorite one yet. I’ve always considered making my own.
