Yep, went for the plate of pasta as big as my head after mountain biking today. Topped with mushrooms, Tofurkey Italian sausage, and a fake "cheez" sauce made with cannelini beans. Couldn't finish it all, so my husband got some of the noodles

It was pretty tasty, lydium 😃 Since I didn't eat a real lunch, I still came in just barely above my 1700 calorie goal for the day

bigmomma-- doubt I'd skimp on the sauce, since it's basically a bean dip, so pretty nutritious. It's made with cannelini beans, nutritional yeast, roasted red peppers and a few other things, and it tastes a bit like Cheez Whiz. I thinned it a bit with a little water. Ordinarily, I would have gone with a little less pasta, though. More veggies isn't a bad idea, but I was exhausted last night, so stopped at mushrooms.

well you know what I adore my veggies but I have sometimes made things overly complicated because I've wanted to stuff in more veggies before. I have learned over time that although it's great to add extra veggies sometimes simplicity does add something to a dish. Particularly with mushrooms because mushrooms are delicious but they are a delicate flavor you had too much you lose the beauty that they impart onto a dish. it's so crazy that you can crazy cheese product out of a bean I've always been curious to try the cashew cheese but of course it's a little bit out of my price range whenever I found it LOL. Not that I'm interested in going vegan you know I adore my cheese but I always like to try new things and I love cashews; I think it's the novelty of it I love the concept of being able to turn one food into another food its just fun.

Leah -- I've made a few vegan foods just to prove to myself it can be done, like the night I made vegan Reubens. They weren't bad! 😂 Nutritional yeast really is the go-to for cheesy flavor. I've tried different vegan cheese recipes, but this one is probably my favorite, both in terms of nutrition and flavor.

That looks delish! I'm going to have to look for that "cheese" sauce recipe. The one I have uses raw cashews, which are hard to get unless I go to the 7-day Adventist church here. Nothing wrong with that, but I've gotten used to having Walmart dump my groceries in my car.

Magpie and honeebuns, here's the recipe: 2 cups drained and rinsed cannelini beans (or other white beans), 1/2 cup roasted red peppers, 1/2 cup nutritional yeast, 3 tablespoons lemon juice, 3 tablespoons tahini, 1/2 teaspoon prepared yellow mustard, 1 or 2 teaspoons light miso, 1/4 teaspoon each garlic and onion powder. Throw it all through the food processor. I use jarred roasted red pepper -- if you roast them yourself, remove seeds and skin. You can skip the miso and just use salt to taste if you can't find miso where you live. If you can't find nutritional yeast locally, I've had good luck ordering the Anthony's brand.

Looks delish! My g. nephew has a dairy allergy and has a 'fake' cheese sauce recipe too! This looks a lot quicker and will give him some variety so I sent it to my niece, thank you!
