WHOOOOWEEEE Highest calorie day in a while. I made eggplant Parmesan, and there aint nuthin' healthy about that sucker.Sure, egg plant tomatoes and even a layer of Zuchinni (my twist) but there's a lot of cheese and fried goodness in there too. Just super yum and decadent is all! The family loves it and I love making it with ingredients from my garden. I kept the portion to 1 and ate a lot of salad, and I got a good bit of exercise today as well.() A splurge well worth the enjoyment my family seems to get from this dish! (ya, I kinda LOVE it too!!) Erly on I would not have made or eaten this dish, but I have really learned balance and control here. Its good to be good and fun to reward oneself too. I have to do it that way, and so far so good! Thanks for reading my ramblings!
