I’m looking to keep some grated cheese on hand for various recipes, but the main challenge is I don’t tend to get through the packet before it goes off, as I use it sparingly.

I’m thinking to divide it into bags in portion size and freezing it, but that adds a lot of plastic use that I’d rather avoid. Any suggestions?

Grate it and put it into 1 freezer bag. I find it doesn’t tend to freeze in a solid block. Any clumps are easily broken up by tapping on the worktop. I weigh it out from frozen and it takes minutes to defrost. I do this with my low fat cheese as I don’t use a lot of it so it keeps it fresh.

there's that trick with minced meat where you put it all in one bag, squish it flat, that half freeze and then bend it so when you need some you can break off just the bit you need to defrost. I wonder if that would work
