Another day starts with good intentions, but we'll see how it progresses. Food packed for the office. Salad and vegetarian chili with quinoa for lunch. Apples and veggies for snacks. Now, to try to stay out of the chocolate

Honestly, if you hadn't mentioned that it was a vegetarian meals I wouldn't even noticed it just look like great food. You have done a wonderful job on your meal prep.

It was pretty tasty, Morticia. The chili was a test run for an upcoming office chili cook-off. Leah - sooooo many good vegetarian and vegan options out there. FoodyDuty-- I stayed out of the office chocolate for once! Sadly, it all fell apart the next day. Various reasons. Really struggling with consistency. Today is a new day, though 👍

I'm a big fan of most vegetarian foods, but as avid cheese lover I doubt that I could ever go vegan and it's so hard to get all nine amino acids if you're vegan. I'm sure you can tell from all of my posts I just 💕 🧀 cheese. Super happy your food was tasty though nothing like a good meal to make your day better!

Cheese is a stopper for a LOT of people, Leah! It's not health food, but I have discovered the joys of a slice of good vegan cheese as a treat here and there, and I have some good recipes for vegan mozzarella, ricotta, and parmesan. As for the protein -- depends on your protein goals. Mine are more modest than what a lot of people shoot for, but generally if you eat a wide variety of foods, include some soy, eat both grains and legumes, and enough calories, it's not that hard to get all nine. I do think too many vegan influencers out there are way too dismissive of the need for protein, but I haven't found it to be a problem to get enough. And actually, right now I'm supposed to be limiting mine, per my doctor. Probably haven't had it down to the level she would like me to at the moment.

mariandchimi -- you just use beans and leave out the meat. Or sometimes I'll use seitan or TVP. It's really more about the flavorings than the specific protein source, so pretty much any chili recipe can be made vegetarian. This one was a Cincinnati-style chili, which uses cinnamon and allspice
