Your husband is fortunate that you are willing to cook a separate meal for him. I am like your husband. Not a huge fan of Parmesan cheese - seems very salty for my taste. Not really a fan of meat sauce either as my grandparents owned an Italian pub/cafe. I prefer a white wine sauce or butter or olive oil with herbs with pasta. Or rice milanese but I'm not not eating a lot of rice nor pasta these days. I am thinking of trying some of the low carb pastas. Have not tried cauliflower rice yet but many of my friends love it. I liked the vegetarian lasagna with spinach and without red sauce better than the traditional kind. I am so picky it's a wonder I can find anything to eat. LOL.

The spinach lasagne I made had no red sauce, no tomatoes. I think the filling was ricotta mixed with cottage cheese. It's been awhile 😅 I think about pasta and in my mind it's not worth the calories. I never get full on it and the nutrition value is nil. I can live without it. What I cannot live without is wild rice! We picked up 10 lb of Ojibwe harvested wild rice yesterday. No plans for it yet.

I had spinach and shitake mushrooms in my omelette this morning LadyD, it was awesome tasting. I could taste each different ingredient in it....my tummy is full and I am smiling!

How do shitake mushrooms compare to button mushrooms for texture? I haven't shopped yet and think I want a larger mushroom for my alfredo tomorrow.
