Only 500 calories for a massive jacket potato with beans, and a huge side salad with tomatoes, radish, cucumber, spring onion and vegan feta cheese (my mum had real feta). Stunning!

Love the salad, love the baked potato.... But is it just me, I can't do baked beans with potatoes? (except chips)

I still find myself being surprised sometimes by the amount of food we can and need to consume when it come to healthy eating and how little unhealthy food is required to kick you out from the calorie deficit. 🥹😀
