Traditionally, these should be served for breakfast. But my 25-year old nephew requested them for his birthday. He has been living with us since May... and his bday is coming up in November. So this was the dry run...

Oh my gosh-potatoes and cheese and peanut sauce!?!?! How have I not heard about these before? Sounds and looks amazing. I’m looking up recipes and plotting when my next ignore-the-calorie-count day will be.

GuitarPlayinWoman, they are super yummy! And there really is not much cheese in each one. Less than a serving for sure. The kids' father is Ecuadorian, he was happy for the salsa de mani... I ate them with regular salsa. That peanut sauce contains the real calorie explosion...
