OMG low carb friends, i had the best breakfast. Made my MIM with a handfull of= blueberries in the mix and it was wonderful, feeling happy !!

Adrianne - so sorry; just as I was replying to you, I was called away. MIM's are muffins made with milled flax or almond (or a mix of both!) They are very low carb, therefore a favorite with many who choose that WOE. (Way of eating). :)
Just a few simple ingredients in the basic recipe, and then a wide range of additions which can be made (like blueberries, pumpkin, & on & on). Mix them up, toss them in the MWO (microwave oven) for just a minute & you're good to go!
Personally, I don't like the texture and always toast mine before I eat them. Good luck to you!

i used flax on mine and yes i agree toasting them makes them even better, however I didnt toast this one bc it was so gooey and I had to have it like that. I also do a pumpkin one and a plain that i toast and use cream cheese on.. They are lifesavers...
