Redporchlady all of the cuts from the hind quarters are the best for Jerky so that would be all of your top and. bottom rounds etc. they are big cuts with low fat content

wifey9707 😁 😁 😁 thanks so much I take alot of pride in being able to do everything myself. Especially projects around the house because then I can only be mad at myself if something isn't perfect or didn't come out the way I wanted it to. I don't think I could look past paying someone a bunch of money to come in and do a sub par job and then have to look at it everyday 😄 I'm just annoying like that but it works out.

OTB - that is what I was thinking too! That the top and bottom rounds would be the best. Grew up on a farm and still butcher a pig, beef and chickens for the freezer. Also just something I learned when going thru a class after cancer at Mayo that marinating meat is a huge plus before grilling, smoking, etc. Supposedly it helps to keep any carcinogens from the coal, wood or gas being on the meat.
