Gwz, from the food site "Dinner at the zoo", I cut it in half for 2 large chicken breasts and brined for 1 hour 15 mins because I didn't want it to be too salty.
8 cups water
1/2 cup kosher salt do not use table salt
1/4 cup honey
3 dried bay leaves
5 cloves of garlic smashed and peeled
1 tablespoon whole black peppercorns
3 sprigs fresh rosemary
3 sprigs fresh thyme
3 sprigs fresh parsley
2 lemons sliced
4 lb whole chicken

Sounds amazing jc! Might be a silly question as does this brine in a bag or a bowl or a container?

Wifey the brine gets brought to a boil then cools, then I just put the chicken in a big glass Tupperware to soak 😎

Cool!! 😎 Thanks. I’m going to look this up. I’ve never bribed but have friends who brine turkey and they say there’s no other way!

Wifey I feel like this brine was particularly successful because of all the herbs and spices besides just salt. I would do this one again for sure it was my first time!

Love me some smoked chicken! Does your brine call for liquid smoke? So good!

Hey 66pack, the brine was all herbs and spices like lemon and peppercorn. Then I rubbed it with smoked paprika and onion powder. Perhaps if I do a whole or spatchcock chicken I'd do a lil liquid smoke to give it some more oomph!

Looks great! Experiment with that grill and various seasoning techniques. I've marinated steaks and chicken breasts for over 48 hours and the flavor goes all the way through!

My husband is a true grill master! We have a Traeger smoker and he makes the best smoked meats ever! I have never done chicken breasts but have done a brined whole chicken. Yours looks yummy!
