I'd about run out of pickled stuff so Monday morning seemed like a good time to replenish the supply. My blood pressure's been running good to low lately. Lots of cardio has my resting pulse down to 56 and my BP at about 110 / 68 so I'm less worried about salt than I used to be. There's about 2Tbsp of salt in each jar, a 50/50 mix of vinegar and water and assorted pickling spices. These are just refrigerator pickles. No tricky fermentation going on here.

The pickled onions on avocado toast with cherry tomatoes will change your life! Sounds weird but trust me lol

Dill pickles with cider vinegar, mustard seed and coriander (& dill). Red onions with cider vinegar, splenda, peppercorns, bay leaves & chiles de arbol. White daikon radish with rice vinegar, turmeric, splenda, coriander, mustard seed, bay leaves & chiles de arbol. 2 Tbs salt in each. I'll have to try the onions on avo toast with some halved grape tomatoes.

Wifey, the onions are good to eat in a few hours. They turn a brilliant pink and are a great garnish to any meat, i.e. cochinita pibil. I use them on almost anything savory. The pickles and radishes are good in about 2 days. They all last 1 to 2 weeks. The onions have the shortest life. They gradually turn darker and darker, eventually going a rather unappealing brown.

Have you ever tried pickle peaches? A couple of good recipes on the internet— just GOOGLE, but try them really good.

Awesome! My hubs does refrigerator pickles. I love kimchi and try to keep some in the fridge too
