So this is day 7 of eating vegan. I feel really good. The first few days I had a terrible headache (withdrawal no doubt from the chemicals and garbage I had been consistently eating), but it was over quickly. In the meantime I am getting to know my body differently. I initially did it as a cleanse--but eating vegan makes it easier for me to just say know. I just made the best tofu and grilled "burger" sandwich. I am for the most part staying away from fake meats, but in a crunch, I have found the veggie burger to be a life saver. But in terms of just exposure--wow, I've eaten/bought/tried foods I would never have eaten before-- I was snacking on jicama last week! I am strategically trying to find ways to eat fewer carbs and more protein. I've lost weight, definitely, but I need to think about what happens as I move forward--I can't stay at 1800 calories a day, so I do need to start figuring ways to cut stuff out while still getting the vitamins that I need. . . I'm thinking that kale/tofu salads might be the way for me to go. . .
