This morning my husband said the flax muffin (standard MIM recipe) I made him last night tasted "like flavored packing paper." :/ Oh, well, gotta love him...and his fiber-less silly self. :)

Keli, the coconut flour is from Bob's Red Mill. It is really good, and is very high in fiber.

I love the nutty flavor of almond flour, but why does it have to be so darn expensive??? It's a little higher in fat also. How do the others (soy & coconut) compare as fat as fat content & price?

@Kat, also fat is the only thing you consume that will have no affect on your glycemic index/blood sugar. And that's awesome!! Eat the fat.

I use the almond flour some - it makes one mean crust for my incredible low-carb ultimate cheesecake! Mmm Mmm GOOD!!!

But you don't understand...I have to save my fat grams for avocado & peanut butter!!! LOL! I'm rather fussy about meeting specific targets for fat, carbs & protein so everything's a tradeoff. :)

Stef - I know what you mean about the baking powder taste. I bought the aluminum free and no longer get that taste. I love mine with just a little pumpkin pie spice and cream cheese before cooking.
