And so delicious. The sweet potato was so good I didn't add a thing to it, just ate as it was. An 800 calorie meal, but I had eaten very little all day, so well within my plan.

Happy Easter everyone! I season the catfish lightly with Tony Chachere's Original seasoning then rub with yellow mustard and shake in a bag with Louisiana fish fry (I use Slap Ya Mama, but any will do). Place it on a foil-lined pan sprayed with Pam & spray the fish lightly with more Pam. Preheat oven to 400° cook 20 minutes and squeeze lemon juice over it as soon as you take it out of the oven. Serve with tartar sauce if you like, I ate mine without.
