Fasted 17 hours. Made a crustless quiche (which we in the Midwest call egg bake) with the roasted veggies I had left. Ate with black beans and the last of the cauliflower rice. Also had a tortilla and half an avocado. It was good.

Ty, it came out good. Helen, I do love a good hotdish! Becca, as you know, I put sour cream on practically everything. At least I use the light version.

BTW, my mom was a gourmet cook but not a baker. (Well, my folks did go through a weird couples bread-baking phase in the 70s, which is another story.) We didn't usually have dessert unless it was a special occasion but there was always ice cream and store-bought cookies. But one of the few desserts in her repertoire was her delicious sour cream coffee cake. It is a bundt cake. I made and ate an embarrassing number of them in 2020!
