I love what I learn from my buddies here on FS. I've implemented several of the ideas my friends here have shared. Today I enjoyed such a variety in my menu. For example, I started the day with some flaxmeal pancakes that were scrumptious. I've made the Muffin In a Minute before, but have never tried the pancakes. Jim and I topped ours with a bit of sugar-free syrup and some whipped cream. We found it to be a very satisfying meal and a quite welcomed change from our standard eggs and turkey bacon or my egg souffle' or quiches that I regularly make. Dinner tonight was marvelous - I fixed a chicken and veggie stir-fry, seasoned with soy sauce (0 carbs) and garlic powder. It was colorful and delish. Btw, I learned something recently that was amazing. Did you know that 'baby corn' is free of carbs/startches because the mini cobs have not grown into maturity at which time the high carbohydrates come into play? Our stir fry was so colorful with a variety of low carb veggies.

Furthermore, another buddy recommended Soy Slender low-carb chocolate soymilk. I had some this evening for a treat - it was yummy. Such a great substitute for the always-loved but seldom-indulged chocolate milk. I found some at Kroger in the health food section for anyone who wants to try it. I am happy to report that I found the carbmaster yogurt (thanks Stef!) for which I was so happy. I had honestly stopped going over to that section of the dairy sometime ago because of the high carb content of standard yogurts - Although I loved them as a snack, I just did not want all the carbs. When I began this WOE I just avoided the yogurt aisle alltogether.

Yay - I found the Torani syrup ya'll recommended at WM. They were out of the vanilla so I picked up the Hazlenut that Vackerman suggested. (Thanks!)

Here's to a mix-it-up, have-some-fun-with-your-food kinda day! Even with ALL the awesome veggies I had for lunch and dinner, I still reached my 20 net carbs today. Love it that I had so much good fiber! Hope your day was as delicious as mine!

Thanks Squiggs! It was refreshing trying some new things that I haven't had since starting this WOE in the Fall. I can't tell you enough how much we enjoyed those flaxmeal pancakes. You've been at this a lot longer - have you tried them? How are things going for you honey?

Thanks for stopping by Rockin - and for reading my l o n g "epistle". It is wonderful what we can learn from one another. I don't know about you, but I am not the least bit bored at all with Induction - even after doing this for a three and a half months. There are so many healthy options and I love to experiment with new recipes and ideas.

Evie - I swear by the Soy Slender, there is also a cappucino flavor that is really yummy. I make a shake with vanilla soy slender, 100% whey protein and cold coffee. Yummo!!! Try some blueberries in those flax pancakes. they add some great flavor and fiber. How fun when we discover some new stuff to add to the arsenal!

Aw, squiggs, sorry to hear that. That is unfortunate. Have your tried almond flour? I wonder if that would work.

Babs, that sounds like a terrific idea. Could you post your recipe w/ measurements for the shake on this journal or PM me? I'd really like to try it. I'm glad to know you are happy with the other flavors as I have not yet tried them. I have certainly thought about the added fruit toppings since beginning to make the flaxmeal pancakes. I am going to add blueberries once I move into OWL - but that is a long time off yet. Fruit is not allowable for me at this point in Induction. Another neat idea is to add low-carb, sugar free chocolate pieces - I bought some from netrition.com, but have not opened the bag yet. I plan to add them to muffins and pancakes, etc. They got great reviews from low carb customers at the website; however, I noticed that are sweetened with sugar alcohols, so must be used sparingly, and only on occassion. Babs, thanks for stopping by - it is always great to hear from you. I appreciate your input so much!

i've not had flaxmeal pancakes, only almond meal ones - thanks for suggestion! having a late bfast today so i'm going to give those a whirl (plus i have a sweet-tooth from tom). you're doing well and the best way to keep it up is to mix it up! i need to get a box of carbquick so i can really change things up - that's the one thing i miss - muffins, pancakes, rolls, etc. and flax doesn't always make the best and i get tired of the taste. thank for the inspiration today!!

Sophie, you are welcome! Please share with me your almond meal recipe - I'd love to learn that. Here is what I did for the flaxmeal: 2 eggs 1/3 cup flax meal 1/4 baking soda Splenda to taste Super simple! Tastes great!

almond flour pancakes: 1/2 cup ground almond flour, 1/4 tsp baking powder, 1/2 oz. water (more if you want thinner pancakes), 1/4 tsp cinnamon, 1 large egg, 1 T veg oil, 1 tsp splenda. makes 3-4 cakes. best to cook low & slow as the almond flour can burn quickly on high temp. i top with butter, kroger sugar free syrup and a few slices of strawberries - yum!

Evie, sounds like a great day food wise. I love it when I find something new that I can try. Sure wish I could do net carbs. Those pancakes sound good. Maybe someday. Hope that you are having a great Tuesday!

pancakes are good! i did edit a little because i need more flavor when it comes to flax. to me, it tastes like a wet dog smells. weird, i know, but... :)
