Day 2 of my experiment continues. I am trying to be sure that I measure and reduce my added fats and dairy; so far so good. My weight is still stalled at 215 and I am hopeful that the experiment will break the stall. I am also making sure I measure my veggies since I have already established that I am not good at eye-balling measures. I will run out soon to pick up a few things at the supermarket and wash my car. It's expected to snow today and I plan to make some food for the week. My oldest will be studying today for exams and I will be coaching her. A FULL DAY AHEAD! Have a great day friends. I measured out my tablespoon of Half & Half for my coffee ... oh my! I must have been pouring in 2 T's rather than one. LOL! It was just enough to take the bitterness out. Definitely measure all your food. If your veggies are non-starchy, eat up! The fiber and nutrients are the good carbs. Have a fun time at the store. We are getting the snow now but it's not accumulating much.

I love my milk - and noticed a huge difference years ago when I seriously cut my intake down. Now I just have it in coffee a few times a day - and try to measure it out as well. Have a great day!

I am back and cooking is in progress. My daughter and I made the peanut butter cups and she loves it. Mom and Lynn: It's so easy to go overboard with cream ... it's so delicious! But I am under control now and measuring. Let's see how it goes. I hope the cauliflower coconut soup tastes OK ... I've never made it before. One way or the other though ... I will drink it until it's finished this week.

Verdict on the coconut cream of cauliflower soup - it was actually delicious. I used the regular recipe for my cream of cauliflower soup and substituted coconut cream instead of full cream. It is not as thick as regular cream but it was still very rich tasting. I am happy with it!

Mom, that will be my next challenge. I think it might be easier than I think since i have the stats for the one with whole cream. :)
