Another day and I'm running late for work. Just enough time to brew a cup of coffee (thanks keuring!) Thank goodness I work in scrubs or I'd be in serious trouble! Of course this means eating on the go as 20 mins to get up and out of the house doesn't leave me time to cook breakfast. Perhaps I'll start making my scramble at night and pop it in the microwave in the morning? Seems as though I'll be sitting in another drive through. Ugh! I had one of those egg white sandwiches from Dunkin Donuts that is low cal but high carb. It wasn't so bad and it sustained me until late afternoon. But I am concerned about my lack of appetite. I know too few calories when dieting is also bad. When I get home from work I'm going to do some more research and see what healthy options have a bit higher of a calorie count so I can lose fat and not muscle. And with that, I am off to my cup of black coffee and the wonderful world of health care!

Fern, You sound like me. Im always running late. Have you tried the egg and sausage muffin (no bread) in the recipes section? I cooked some yesterday and they are great. I put them in a ziplock in the fridge and just pop one on the microwave..instant breakfast!
