What is jelly meat??

trytrytryagainagain.....You can call it different ways....jellied pork, jelly meat, pork jelly, kholodets, etc... The easiest way to explain what it is: it's pulled pork in jelly made from broth 😉.

Ah Hemmelyn, kholodets just gave me some great memories! So in English it’s called aspic. It’s gone a bit out of fashion but you mentioning it makes me want to make it now!

I cook it myself and there are a lot of different ways how people cook their jellied meat. If you would like you can see it on Youtube, just type in "jellied meat". I personally take pork shoulder blade, pork knee, smaller piece of beef and leave them in the cold water for overnight. That way you can remove all the blood and can get clear broth at the end. After 10-12 hours I change water, add couple of pig legs(natural gelatine), few carrots, a big unpeeled onion, pepper corn, coarse salt, some bay leafs, some garlic cloves and bring it to boil. Then I cook it on low heat for approximately 3-3,5 hours, time to time removing foam. When it's cooked then I pull apart all the meat but not using skin or legs. Now I pour clear broth through a sieve and mix it with meat. I already have prepared special forms or/and small glass bowls with carrot slices and some garden peas on the bottom and then I start filling them carefully with pulled meat and broth mix. When the mix have cooled down I put the bowls in the fridge. It will be ready to eat on the next day 😉🍖🥕🧅🧄🥩
