Yep, that’s me, actually one step from being a vegan now.!! It’s “morning star grillers” with pepper, onion and taco seasoning. The bread looking disks are boiled white sweet potato with a little flour, baked in my air fryer...

Foot looks terrible, going through all the colors of bruising, toes and all. Pain is a dull all the time ache. I did test drive my 🛴💨 It was nice to get out of the apt. Follow up appt on Monday to see if I’m healing. 🤞I’m being really good about not putting pressure on foot and use my crutches 100% of the time. Thank you for asking. The hardest part is not online shopping 😳

Oh darn... That sounds rough. ❤️ Doing everything you can to help the bones stay aligned and able to heal is for sure the best. Not the same by a Longshot, but I broke a toe in a couple places a few months before a planned 3 week trip to Europe. I sure wish I had taken better care. The day before leaving on the trip they were x-raying and it had not mended at all. It made for an awful lot of pain and a full year later it was still hurting... Just because I wouldn't quit pushing... If only I had taken a good month and a half to rest the darn thing properly! OK, alrighty! I know you know! I just know you are a machine for wanting to work out hard! Man I'm sorry... I can send you a list of things I want if you want to shop for me! 😂

Interesting! I don't think I've ever seen a white sweet potato. If you cooked that meal for me I would definitely eat it...and probably like it. I do enjoy several tofu dishes because I think it absorbs flavors so well. I wish grocery stores & restaurants would give away "meat" samples because buying new things to try is so expensive and often disappointing. I'm going to get a crowbar and pry my mind open!💛

I try to avoid tofu though I eat it buy a block from time to time. The white sweet potatoes are mainly used in the Caribbean, less sweet than orange kind, great in stews. I eliminated meat and chicken almost 3 years ago, dairy 17 months and eggs very recently. Currently I eat seafood on the weekends only. I’ll see how I do until end of the year without eggs and very limited seafood. Btw I totally eat non vegan chocolate once a week and bday cake once a month, I’m 99% dairy free lol The market has an abundance of meatless fake meats. Some amazing, some gross. Some full of funky ingredients, some more natural, most heavily processed. It’s time consuming to make everything from scratch so I try to balance some pre packaged, some scratch. To be honest it’s a lot of trial and error, costly too. I don’t focus on macros as much as total calories. Now that I’m not working out my carb intake is higher but again I keep kcals in check.
