Tomorrow is my BDay so I am making a cheesecake low carb of course. It is cooking right now and smells SO GOOD!

24 ounces cream cheese, set out to room temp.
2tsp Stevia toffee flavored liquid
5 eggs, set out to room temp.
2 teaspoons vanilla
16oz sour cream

Grease two deep dish 9" pans and set aside.

Beat the cream cheese on lowest setting for 5 mins. Add the Stevia and Vanilla flavoring and beat lightly. Add one egg at a time and beat lightly, repeat for all eggs one at a time. Next, add the sour cream and beat well.

Pour mix into pans. Bake at 325º (300º for dark, glass or nonstick pan) for 75 minutes. Start checking at 45 mins. If it's getting brown, turn the oven off. When the time is up, prop open the oven door, turn off oven and leave the cheesecake in the oven for another hour. After 1 hour, remove from the oven and allow to cool completely. Chill 12-24 hours before serving. The longer you can chill the firmer it will set.

Makes 12 nice sized slices. Top with fresh whipped whipping cream.

Does that turn out to be a heavy dense cheesecake? I had a recipe for one but I have lost it. I don't care for the creamy textured ones... I like the ones that way a ton and are like cutting into a side of beef :)

Yes, it is a New York style cheesecake, not the light creamy versions. Those to me are not cheesecake. It has got to taste like I am doing something 'oh so wrong' but in a good way....lol. It could be denser if you add in 1c of whey protein, but I am on Induction so left that out. Or if you have a springform pan you could put it all in there instead of two pie pans and cook for the full 75 mins. It would be so GOOD in a springform pan as one cake. I just don't have one.

Thanks Everyone! Okay so had some of the cheesecake today. I must have doubled the recipe last time. It was very thin and seemed to have shrunk overnight in the fridge. So double the recipe if you want thick NY Cheesecake.
