Just a quicky. So busy! Why does this happen every TG? I have so much to do and now have a work deadline for MONDAY. Have to deliver so I can impress the client so they will send me more work already!!! Will work Friday and all weekend. Taking Thursday off (big wup-I know). Have acid reflux attack-stress induced. Dry brining a turkey and it looks like a slab of putrifying flesh-not good. Have 9 peeps coming over. Hate to poison them-well maybe not all of them.
Just have time to do the challenge so i do not let team down. Did exercise today as well and had healthy lunch. have not entered dinner yet-had a glass of wine-medicinal-on a Monday-how will I be by Wednesday?

NO WHINING. THERE WILL BE NO CRYING ON THANKSGIVING!

aw *hugs* It's just a day to enjoy. Try to take 5 minutes here and there to just do some quick deep breathing. It might help you relax.

Feckin' H*ll-you have that right. I am shredding bread as we speak. Been cooking since I got home from work. Good thing is no time to eat much although eating (and drinking:) BUT still weigh same as last weigh in...have to watch out Thursday though when I come in for a landing. Happy Thanksgiving!!

I saw a tv show about brining a turkey... I have never heard of it before and have no idea what it is or how to do it. I was in the restaurant business so you would think I would know what that is. Sounds good though, except for the possilbe side effect's of posioning ... is it questionable ?

Not at all-bacteria cannot grow in brine. I used to wet brine the turkey but have switched to dry brine this year. Have to start earlier for the dry but hoping it's worth it. Very easier-kosher salt and water for wet-just the salt for dry. Some people like to add apple cider or a mixture of herbs/spices to a wet brine. Wet can be done the night before. Makes the meat (especially white) juicier. You can also buy pre-brined birds. I know Trader Joes was selling them. I'll let you know how it goes. Also will post a link for the techniques.
