I have spent the morning cooking, and how nice that feels. Eating left over (the last bit) of Tuna Casserole from last weekend. It was just Healthy Request Cream of Celery with Barilla Plus Penne, green peas, and Chunk Light Tuna in Water. Not very flavorful as a left over, but it was good the first time around.
I boiled all of the eggs that I am unsure how long they have been in the fridge (we bought some fresh organic this week due to a sale). I'm going to make some egg salad and maybe a couple other things, not sure yet. Any suggestions? (There are probably almost a dozen eggs now boiled) Of course, I can always use those as a snack or breakfast, etc too...
I also made my FAVORITE soup. It is the thing that I always remember from the fall at my house. My mama used to make it, and since all of my recipes are boxed up she emailed it to me this weekend. It is 3 Cups chicken broth (I used Swanson from the carton this time), three whole carrots chopped, one whole celery head chopped, 2 cooked cups of wheat rice (Uncle Ben's), 1 1/2 cups of Half & Half (publix brand nothing special), three breasts of cooked chicken (1.41 lbs I think), the water that I cooked the chicken in, and then I added a handful of chopped baby bellas (portobella mushrooms). Then salt and cayenne were added through out the cooking process. I just love this soup. You do not eat it as soon as it is cooked, but after a day or two of chilling. Then it is the best. :) I upgraded a couple things by using the brown rice instead of white rice, and adding more of the veggies (including baby bellas) than normal. Just little things that I think are the right direction.
I tried a new green tea this morning. Blah! I usually love green tea, and this was a different brand for me. Amazing. It was Twinings of London Decaf Green Tea. When it was hot, it was so bitter, so I added a little raw sugar and that helped a little but not much, still a very strong after taste. I let it get cold (in this house that's really cold) and now it tastes great. Hmmm... Lesson learned with that one!
Tonight I think the plan is the have london broiled sauteed in something and then put over rice, might use the Ponzu sauce. We'll see...
