Food Find! After the mock duck (asian style)from the other day, yesterday's experiment dealt with a new variety--Trader Joe's Beefless strips...! Very BEEFY (eww!), however, I found a way to dress them up--no, DRENCH them in my own concoction---and it turned out DE-LISH!!! Restaurants have nothin' on me now!!! ;)
So, here's the recipe (esp. for Amryk), and here's the pic (esp. for Sibby!)--Here ya go, Sibs! Go to town, and analyze THAT! Hah!
Meatless beef strips in a stir fry with veggies 1) sauteed garlic, scallions, thai chillies in sesame oil
2) added the beefless strips (cut up in small pieces to help absorb the juices)
3) added green bell peppers, celery, mushrooms, bean sprouts, lotus root, and continued to cook a bit...
4) made my sauce: sriracha sauce, lite soy cause, and vegi oyster sauce, mixed, stirred, set aside for a min and added to the above
5) added fresh basil, and crushed almonds
Large plate-full, high in proteins, low in carbs, pretty good fiber, and low in sodium---and only 3 pts, including the almonds!!
P.S: I have done a very obnoxious thing (I might be fried for that!!)...However, based on Simavision's idea, I've started an Amryk Fan Club for our buddy!! Go visit there, post something, and check it out....It'll be deleted in a day or so, to allow Amryk to come out of that cubby hole she's gone hiding in!!!! Here it is:Amryk Fan Club______________________________________________________________________

My positive/grateful affirmation of the day:I have been dealing with an emotionally charged issue with someone very dear to me, and it is difficult on both of us to say the least. Howwever, ironically, I am grateful for the fights because THAT means we have something worth FIGHTING FOR!!!! And SOMEONE worth fighting for!!!!
My emotional eating hasn't shown up in a few days..could this be real progress??? I hope.
