After "whirlwind yesterday", today has been relatively quiet. I slept in until later, and got my 8 hours of sleep to make up for the last few days' deficit. Was working from home today, but couldn't be too productive until evening when I had to meet a client, and it ended up being a productive meeting.
On my way home, I picked up some new asian groceries to experiment with, including mock duck, miso paste, chinese greens, shirotaki noodles, more of the meatless lettuce stuffers etc. I am loaded up on all meat substitutes now!! Did you know Trader Joe's has some good mock meats including MEatless beef strips and Meatless chicken strips? Plus, I like the huge variety of spiced, nonspiced, bwown, white, and all sorts of BEAN CURDS from the asian stores. Plus, tofu, mock duck and chicken (seitan products), ground "meat" & crumbles etc. complete my stocked fridge and pantry.
I made my own version of a stir fry using the mock duck, and used thai chillies, garlic, sesame oil, baby corns, chinese mushrooms, water chestnuts, bamboo shoots, sriracha sauce, fresh basil, almonds etc. I've attached the picture below. It was GOOD!! And pretty low in points (4 pts), as well as in carbs (2-3 carbs?)..the sodium content is unavoidable in most of these asian things, but I try to find relatively lower sodium content ones.
I was just thinking today while grocery-shopping, that as we learn more about diets and nutrition, and learn what's good for our bodies, we end up having to read so many things on food labels now!! I try to find stuff that is low in calories, high in fiber, high in proteins, and recently--
low in carbs and especially net carbs, low in sodium, no chemical additives..oh! and vegetarian, so no "fishy" stuff of any kind...so many fine prints to read!! As a result, food shopping, even for these basic items, took 1.5 hours!!!
So, I guess I HAVE been busy today. Even though it feels like I have just wasted the day. I have so much crap to take care of and need to get it all done within the weekend!
I think I want to go clothes shopping now. About time. I think I've lost like 27 pounds so far, and about time I started to give my wardrobe a gradual overhaul.
Over the last two days, I have been really feeling a dramatic size shift, like crossing over one zone to another. My face seems small! However, when I took pictures of myself today to see if I could tell, I didn't see as much difference. Oh well. Still a long way to go. Another 25 pounds or so.

Exercise: None so far and it's already 11.30...maybe I'll go around midnight again!
