Cheylynn this is definitely a low calorie option: Sprinkle raw chicken breast with a mixture of spices like garlic salt, cumin, chili powder toss with 2 teaspoons of olive oil & cook on nonstick pan. Remove & use the same pan to sizzle up the cauliflower rice & sprinkle with some dill & sea salt. Can add more flavors with mushroom/onion. Dip can be made with Greek yogurt, lemon juice plus dill & garlic salt to taste. It can be made “Keto” by tossing chicken in more olive oil & adding some butter to cauli rice.
