Okra has taken some getting used to, but it’s low in carbs and it tastes better than cauliflower LOL!
Jambalaya wouldn’t be the same without it.
It really was delicious, even without rice

I used to make an instant jambalaya from a box and throw in smoked sausage and frozen shrimp. It was mostly rice and dehydrated veggies.
This was so much better with fresh cooked seasoned chicken, cajun style andouille sausage, fresh shrimp my own spices and veggies. The okra was frozen, because it’s out of season. So, so, so much better!
