Went shopping last night and also got a delivery of meats and veggies from the organic place. Cooking tonight! Gonna put together 21 meals for the week, no excuses. Tonight: need to use up brussel sprouts, red peppers, onions, cauliflower, collard greens, squash, eggs, mushrooms, and tomatillos. Spinach Shakshuka with spinach, tomatillos, eggs, and feta cheese. Broccoli and mushroom quiche (crustless) Cauliflower rice and zucchini curry Mediterranean squash stew and roasted squash Cilantro and lime chicken with coconut cream sauce Collard greens with apple and ham Nonfat yogurt dressing with dill Meat patties from ground beef, ground pork, and ground lamb. Will try to mix in various spices. Doesn't sound like an easy night but I will freeze some stuff, measure out some things, saute a lot together, and make it a purposeful night.
