So, what's wrong with chicken livers? I eat them all the time, at least twice a month. Just by themselves dipped in FF Ranch dressing. It's a great snack or even lunch.

Chicken livers are very nutritious, lots of protein. However, one 2 ounce serving has over 300 mg of cholesterol (typically 300 mg has been considered a good amount to intake in a day unless you have a severe case of high cholesterol )- they are after all liver. They are also very high in vitamin A. which is a vitamin that if eaten in excess can be toxic to the body. A NORMAL 2 oz. serving once or twice as week is probably not an issue but something to consider if you think you are eating more than a couple ounces as a serving. People do die from Vitamin A toxicity— I have seen it happen a few times in my nursing career. Do a GOOGLE and read up on the nutritional values of chicken liver.
