Looks so good! How did you cook the sweet potatoes? I either bake them with the skin or roast on a cookie sheet after slicing them. Yours look better!

I convection bake the sweet potatoes at 400 after cut and peeled.

I recently got a convection bake/microwave oven that I haven't figured out how to use. I will have to try that!
