Day two of being back in the saddle and luckily I am not saddle sore.. he he a little equestrian humor for you all. My middle back is sore from PT but I really think that the PT is working. Which makes me really happy. I am not ready to step on the scale yet.. I will on saturday or sunday. I should do it on Sunday.. that will make me behave better on Saturday.. :) I am trying to up my fiber intake and I have done crazy well the last two days. I am also trying to lower my cholesterol intake and that is also going really well. I bought some almond butter today at the store it was very good. I also got some whole wheat flour and I hope to try and make some cookies for the family. I also finally got some of the Nancy's cottage cheese, I think I will try it tomorrow.. I will let you all know what I think of that as well. Oh and something really exciting I am trying to sign up for a cooking class starting Sept 8th.. it is for 4 weeks from 6 to 8 on Wed. It is a health based cooking class.. I spoke to the lady who teaches the class and she said she will email me when I can reg. for the class.. I hope the class is not canceled due to lack of interest. So keep your fingers crossed. :)

Haven't tried almond butter, what do you put it on? Toast & bagels & stuff? Sounds yummy. I need to try almond milk too. Glad the PT is working, back problems super suck. The cooking class sounds neat! Hopefully you will have some delightful family recipes to share...hey did you join Runesinger's family dinner challenge? If not, you should. Starts soon!

Im excited for you and the cooking class! I took a bunch in college and after and loved it! That's great! I need your honest input on the almond butter because I REALLY miss peanut butter. Thats great you are trying to up your fiber, let me know how that goes and share anytips you can with me. It's something I think I need to do too. Also.. sorry bout your sore back ... it might be because of all the horse riding. Maybe you need a softer saddle?

I put the almond butter on a bagel thin. It was tasty.. I got the almond butter with sea salt.. so it is more savory. I liked it alot. I dont think it is any better for you than peanut butter other than this kind of almond butter did not have any weird things in it that I could not pronounce. It was yummy but more savory than peanut butter.. but I read that almonds are suggested when you have high cholesterol.. and I am trying to broaden my horizons. Tasty but could never replace peanut butter. I love pb. I could eat it right out of the jar. :)

Mmmm, almond butter!! I haven't had that in so long! Good stuff! Glad to hear you're back in the saddle. I really hope that class comes through for you. Cooking classes are fun & I'm sure you'd really enjoy it! = )

Yea, give yourself a few days to recoup from being off diet before stepping on the scale. I was afraid to step on the scale after vacation.
