Blah. Haven't had a great week, weight loss wise. I've gained 1.5lbs. I'm sure it's because I've been stuck at home. My daughter came down with Croup this last week. So, got to stay home for 3 days. Wasn't terribly productive or fun. She was extra whiney and wired at the same time. I think the medicine they prescribed caused her to feel wide awake!
Money is extremely tight for us now. Because of that, I'm having to cut our food budget nearly in half. Don't know how in the heck I'm going to grocery shop with such little money, and do it healthfully. I think I'll start out by going to the produce stand and stocking up with produce. I'm sure I can make some meals out of produce. Not sure if we'll be able to buy much in the way of meat, though. UGH! I HATE these rising gas prices. When money is tight and I have to start being creative with the food, I tend to make things that aren't as weight loss friendly as I'd like. My husband says to get top ramen and potatos...hello, hubby? Can we say high carbs? ~sigh~ Anyway, I'm glad it's friday, I'm trying to hold my chin up and not lose faith in the Almighty...who has always taken care of us.
Must be the cloudy weather gettin' to me.

Amen! I hear ya! Boy do I hear my crock pot a calling and SOUPS! I feel that I can make less food last longer if I put a bunch of water in with it. I can make a huge crock of food with little meat, lots of veggies or even beans instead of meat and we can still eat fairly balanced with less cost. :) WE CAN DO THIS!! We have to! Lets find some more create crock cookin' that can be tasty and sustain us! I know that helped me a lot when I lost so well this winter. :) Think I'll be making more soups with veggies and beans! Glad baby is better... croup sux!! You are so lucky that you caught it early, we've had a few scares with it and once in the ER was enough to make me very weary of it. Chin up girly!! We can do it!! Oh... and yes! We are on for a bon fire tomorrow night! =D We'll figure out something to have and have fun!

You can do very well with vegetables and meat only as a condiment, as in a good chop suey with a little BBQ pork. Meat should be minimized for many reasons of which I am sure you are aware. I once read an article in the WSJ which stated that Glasgow in Scotland had the highest rate of heart disease of the big cities of the world. One of the local citizens said that she thought the people of the city really didn't know how to work with vegetables because that kind of cooking was not really a part of the culture. I totally agree with you about prices, this is getting ridiculous.

Chop Suey! You know, I've never had chop suey! I think I will find myself a recipe for that. It sounds good! =)

Any meat that you like is ok for chop suey (no meat as well), a bottle of Chinese (or Japanese) stir fry sauce (like Lee Kum Kee brand) used in moderation (or a bit of oyster sauce, same brand) with a little soy sauce, pepper, and good timing in placing the vegetables in the pan so they don't become soggy can work out. Look for a simple recipe that appeals to you as a starting point. You have to make it a few times to get good at it. Simple and delicious.
