Its was interesting. I've never had eggplant before. I kept it simple, just olive oil, salt, and chopped garlic. I wanted to really taste it. It reminded me of a nutty flavor, a little like peanuts. Personally not my favorite, but these days with my daily calorie deficit I'm pretty much down to eat anything when I can.

Have your ever made ratatouille? I roast it instead of cooking it stove top. One of my favorite ways to cook eggplant.

I like to add tamari soy sauce to my eggplant with olive oil, garlic and ginger. It's kind of a teriaki style. Yummy.

If you happen to have an Asian market handy, try roasted or steamed Japanese eggplant instead. The skin isn't quite so tough and the flesh has a bit milder flavor. I like mine either simply roasted, or steamed and tossed with a bit of soy sauce and sesame oil (and gochugaru if you like some spice, but that's probably just me).
