Just took a whack at making squash casserole ATKINS style... we shall see how it turns out. This is my attempt at giving in to a desire for comfort food. I am also making burgers... minus the buns...but piling pickles, 'maters, must, mayo, ketchup (reduced) and of course some cheese... on the plate. :)
