1982nodak's Journal, 06 March 2019

Maintained today, but I think that wasn't due to yesterdays diet. I was great yesterday and I walked 16,000 steps. However, I think I was still recovering from having a sub from a subway tray and a cookie at my nieces birthday party. The carbs have never been my friend. Today my calorie plan is higher than normal, but still at a deficit. I promised my husband cheeseburgers and sweet potato fries tonight. I will go bunless for mine to save carbs and calories. And we will pan fri instead of deep fry the potatoes and do it in coconut oil and sprinkle with a bit of stevia and cinnamon to make a cinnamon/sugar type of fry we both like. But it will still be a 400 calorie deficit and if I exercise more it should be more than that, so hopefully I don't go up tomorrow and I go back down. I like having a scale that shows the nearest 10th of a pound. Even if I only lose 1 pound in a week I can watch it go down slowly and it is encouraging. 400 calories would still be a 10th of a pound. Or it should be at least.
Last night I make vinegar chicken thighs which was one of the recipes of my husbands mom's that he wanted me to learn. It is really good, but the third ingredient is sugar and I'm giving up added sugar at home at least, so instead I substituted stevia and since it is so sweet I only used 1/3 of the amount I would have used with sugar and it turned out really well. My husband said he is fine with the healthier version. Having him on board helps so much. He just wants pizza and burgers once and awhile and he is okay with gluten free or cauliflower pizza crust.
What are your favorite healthy versions of typically thought of unhealthy foods, for example the cauliflower pizza I'm always looking for new foods to try and make and could use a little inspiration.

Thanks Rosio19. I'm doing low carb/high fat so butter and oils are fine, but you are right juices, sauces with sugar ext are things I have had to cut out or make my own healthy version of. Do you have any recipes of some of your old favorite meals from before you were healthy that you have now adapted to make healthier?

There are literally thousands of recipes on the internet for any diet plan you want to follow. Google is your friend. Find one, pick one try one.

Your right Kenna. I am simply interested in real people and which meals all of you actually enjoy. I have tons of Pinterest recipes picked and I delete them if I try them and don't like them. So finding recipes online isn't the same as finding enjoyable recipes online, lol. I was simply curious and trying to connect with some of you on the same journey. I can't connect with google in the same way since it isn't on the same weight loss journey. lol

I usually collect a lot recipes and then never make them LOL. The last thing I made that were good was a chicken dish. It is here: https://www.lowcarbzen.com/low-carb-recipes/easy-low-carb-mexican-chicken-casserole/ But I made an easy version where I used salsa with some cream cheese for cover. With a few extra spices it was really good. I also made the fathead pizza dough (using the recipe on the diet doctor site) and the family approved so I will make that one again.

Thanks Liv 001. I will have to try the chicken casserole. That looks good. I'm taking a break from making pizza dough, lol. I've tried so many recipes. I actually found cauliflower crust and gluten free frozen pizza's my family likes. If we do have carbs as a spurge pizza from our favorite place is usually the splurge. But this helps us do that less often. I wish I knew the brands. I will take pictures and upload them tonight or tomorrow, because they are actually pretty tasty. Not enough cheese so we add extra, but otherwise my family approves. They are small for a family of four, but that is good portion control and ensures we have a salad with it. I had never seen the lowcarbzen site before. Thank you for sharing that. It is fun to look through.

I’m not dieting — I use FS to monitor what I eat and continue with my HEALTHIER eating lifestyle. I collect recipes from everywhere- vegetarian, Keto, I don’t care what it is, if it sounds good I try. It. My only food restriction is salt related— I try to keep my sodium intake at 1800- 2000. I also monitor my potassium. Most of us never get close to what we should have so I track it.
