With fasting I am truly struggling with how much to eat when feasting. I am afraid that my lettuces will spoil so I overdo it and now I stuffed. Tonight I took the mushrooms I had and fried them in butter with some garlic, salt and pepper and then put them on the salad, it felt like I was at a gourmet restaurant with some fancy salad and warm mushrooms. Yum!! I prefer them like that over raw.

What I know is...there's no such thing as over-eating vegetables because they easily digest and good for the gut. Easy on creamy dressings though. But your salad looks amazing!

Your salad looks great! About the lettuce going bad, years ago when in high school, used to eat at this Chinese fast food place that served a stir-fried type of dish. Among one of the food items was lettuce. I would go home and try to recreate it . Of course it never tasted the same, but was still very good. Cooked, or stir-fried lettuce is doable. Buen provecho! 😋

great idea about the mushrooms. I prefer them cooked as well. It is a pain, but i have gone back to buying whole heads of lettuce and "fixing them" myself, rather than the much more convenient bags/plastic clam shells. I invested in a salad spinner. I core, wash, spin, roll in paper towel or tuck in some paper towel. Store in the crisper in a plastic bag. It lasts like 3 weeks.

When it comes to salad, anything goes!! I add pureed sweet potato with balsamic vinegar! It's really good!
