No loss today - in fact I have gained 1/2 a pound. I am not worried about it because TOM came this morning. Maybe I shouldn't weigh for a few days. Yesterday I made those peanut butter cookies - Atkins style and I had one and then I had a sugar free Russell Stover's Pecan Delight. There is only 1 net carb in one piece and I only had one piece. I know if I keep doing that my loss will slow way down but it was nice for a treat. I took my quiz for chapter 2 of economics and I made another 92. I have one more quiz then I have to go to the college for the test. I am worried that without the notes and book I won't do as well so I am am going to study study study before I go take it. OH! This morning a co-worker said "you're getting skinny girl" YAY!!! I only had to drop 34 pounds before I got a compliment! LOL! I didn't get my calories as high as I wanted them yesterday but I felt like a pig after the cookie and candy. We have a garden and we love to make fried summer squash. Well we used to roll it in corn meal and fry it - it is so good. Well I changed it up and now I roll it in ground flax seeds and guess what, it is just as good. The kids even eat it and love it. I am learning new ways to get my fiber in.

Not only are you getting skinny, but you are one smart cookie. You have the best of both worlds sweetie. Great job on the quizzes. I am sure you will do wonderfully on the in person tests as well. Are the cookies good? I might try them this weekend. As far as 1/2 a pound when TOM comes is wonderful. I wouldn't worry too much about it. I am sure it will be gone with more once it leaves.

Actually the cookies aren't the best but I modified the recipie and it was a little better. Try 1 cup peanut butter, 1 egg, about 12 servings of splenda (not 1 cup - WAY TOO MUCH) and I added a tsp of baking powder and 3 tbsp of flax seed. I figured it was good in the MIM, why not the cookies. The next time I am going to try a little less peanut butter and more flax meal. If I can perfect it to having a texture more like a cookie and less like sand I should win an award! LOL!

Your doing great kid, we can find replacements for all the things we used to eat. I wonder if that squash could be dipped in egg and then parmesan cheese with some spices and fried! Its always nice to hear compliments about our weight loss, it gives us a boost. :)

I take pork rinds and put them in my bullet blender until they are as fine as flour, put the squash in buttermilk and then roll in the pork rind flour and fry. MMMMM good!! Also great on chicken, gizzards, pork chops, cube steak, any meat or veggie you normally fry!

I bet it would, we have so much that I am bringing some to work tomorrow to give away. I grew sweet bannana peppers too and I don't eat them so I am giving all of them away. I hope I can get rid of my watermelons this summer, they aren't exactly easy to bring to work! I guess I could leave them in the car and make everyone come get them there.

Not sure if you have tried soy flour or not. It has only 1.33 net carbs per tbsp as compared to the 5.76 in white flour. A much better choice when flax meal wont do the job.
