Made a pot roast in the Instant Pot. the carrots were for my husband. I roasted zucchini for myself. It came out very tender & flavorful. The recipe (from mind "full" mom) called for horseradish. I forgot it, but could see how adding would work well!

Kpmarx - I don't know what Pixie68 did to hers, but you can roast zucchini or pretty much any other vegetable in a hot oven with salt, pepper, (insert spices of your choice), and Pam (or any other zero calorie cooking spray) and get that kind of look from them. I throw my cut up veggies in a bowl, add spices, spray with Pam, and then lay them out on a lined cookie sheet in a single layer. I bake them in a 400 degree F (200 degree C) oven for 20-40 minutes (depends on the veg). Green beans, asparagus, brussels sprouts, carrots, potatoes (if you eat them), zucchini, butternut squash... pretty much whatever you pan fry can be made this way a little healthier.

Wow Tech Support worked fast when I was not able to post here. I love the veggies, how they are bright and colorful. I am not a meat fan, so sorry. You gave me an idea for carrots and squash. I've been trying to find ways to bring back carrots into my lifestyle eating. Thx.

Thanks everyone!! @Jengetfit, I look forward to seeing an instantpot post soon! @Kpmarx, I tossed them in oil & sprinkled a mixture of smoked paprika, granulated garlic & pink salt, so maybe that is giving them the color,they did carmelize a bit when I then roasted at 450 for a little less than 20 minutes. I was also making potatoes for my husband, so did them at the same time. The carrots were in the pot with shallots & garlic. I would like to add mushrooms next time. Got the leftovers for lunch today!
