might be yuba, which is a skin that forms on the soy milk when tofu is made. it's chewy and nutty and awesome.

They call it dried tofu here in China, they have many different type of tofu here, and they are two whole eggs but I don't eat the yellow parts lol

Oh, I guess they are not yuba, but something like this: https://lightorangebean.com/chinese-tofu-noodles-stir-fry/
-- I guess an Asian market like 99 Ranch would have them. But also the yuba noodles I mentioned are similar and those you can get at Target, Whole Foods, etc. in the Hodo Soy brand (their plant is in Oakland).

Have you tried the "Mircale Noodle"? Those were not a great substitute for me. Are these better?
