It is probably just water weight from adding back in carbs. That is why a lot of people who start low carb lose a good chunk of weight when they first start low carb because of the water drop. Once you reach your goal and if you want to add carbs back in I suggest doing it slowly. Find what works for you.

5 lbs in one day is most likely just water weight and food weight as well. I know when I did low carb and had a high carb day I would gain 5+ lbs and once I started low carb again it would all just come off in a matter of days. 3500 calories equals around a pound of fat. I know it can vary from person to person but I highly doubt it is fat.

Your headache may be due to low electrolytes because the body sheds salt when you eat low carb. Have some salty broth or bouillon a couple of times a day. Low salt can cause dizziness, fuzzy thinking, and constipation, as well as headaches.

Apache, I don't know the OP's WOE; but for a T2 diabetic like me, what I eat definitely matters; it's not just the calories.

@srossca I started at 272, so I’ve lost over 100 lbs. I used a low carb/low calorie nutrition program with meal replacements. It’s been awesome! I went from a size 22W to a 5!

I’m positive that it’s water from carb bloat and the alcohol. It’ll shed in a few days. But now I’m thinking I should set my goal weight lower since I’ll gain a few once I reintroduce carbs to my regular diet.

you have done wonderful on your program and you will need to think ahead of a lifestyle plan that will help you maintain your weight once you hit your goal. to avoid weight creeping back up. you don't want to get back into poor eating habits. the few water weight pounds are nothing over the long range
