MsEra - I made chicken thighs in the instant pot with coconut milk, spices, and then threw in mixed field greens, fresh baby spinach and frozen spinach. Served with a hard boiled egg.

Thanks! I love to cook and usually don’t bother with recipes. This was made to use up greens that were about to go off!
