Meant to write down what I had for dinner last night because it was particularly yummy. I baked chicken breasts-- seasoned with salt, garlic, pepper, and paprika(was trying something new on the paprika). On top of these I put, in order, slices of Monterey jack cheese (stick them back in the over to melt a little), sour cream, sliced avacado, and bacon torn into pieces. I used to make this occasionally as a treat and usually serve it on a bun, but it was just as tasty without. Didn't fill me up as much as usual, goes to show what those carbs do! It's extra yummy with a dipping sauce of Thousand Island dressing, but I didn't have and and wasn't sure if that was Induction-friendly. I'm thinking next time I might use about a 20-80 mix of dressing and heavy cream.
